A Chef at the Plaza Athenee in Paris for many years, Dublin-born Raymond Hunt arrived in Waterville in 1966 to become Head Chef of the Butler Arms Hotel. Six years later, he took over as Chef at the famous Waterville Lake Hotel. In 1978, Raymond and Deirdre opened the beautiful Huntsman Restaurant, overlooking the Atlantic Ocean, in the quaint village of Waterville. The Huntsman has received many awards since opening, including the prestigious Bord Failte award, recommendations in Egon Ronay?s Good Food Guide, the Michelin Guide and Foeder?s Guide. Raymond and Deirdre have hosted many celebrities during their long career, the most noted being the late Charlie Chaplin.
